To properly cook a steak the first thing is to take the steak out of the fridge and let it warm to room temperature somewhat so it will cook properly. Set your oven at 500 degrees or as close to that as possible. Put a oven safe cooking pan on the stovetop and get it hot. Meantime use kosher sea salt and ground pepper to season the steak. That is the only seasoning you will need. Melt butter (lots of it) in the hot pan. Place the steak on the hot pan and cook in the butter until is seared well. Depending on the thickness of the steak–NEXT do this!. If fairly thin–about an inch –turn the steak over, spoon the butter on it and place the pan in the oven for a minute or two. It cooks fast and by putting the hot pan in the hot oven, the other side of the steak will continue to sear and will be ready quickly. Check the temp and dont let it overcook–again–it cooks fast. It will continue to cook while resting.
If the steak is an inch and a half to two inches thick. Do the same thing but let the steak stay in the oven about 2 or 3 minutes–check the temp and don’t let it overcook. Same as before, it will continue to cook while resting.
Depending upon how you like your steaks, take it off at about 120 degrees and let it rest. For rare-cooking it this way take it off about 110 degrees and let it rest. For medium take it off about 125-127 and let it rest.
The time in the oven is crucial–you can always cook it more but you cannot cook it less–so take it out early. One minute too long takes it to a more done or perhaps overdone level.
